Fried Turkey & Waffles With Cranberry Sauce

Ingredients

1 lb. turkey breast

4-6 large eggs

1 ½ cups all-purpose flour

1 ½ cups Panko bread crumbs

6 cups frying oil

1 box stuffing mix

1 can cranberry sauce

Non-stick cooking spray

Salt and pepper to taste

Instructions:

Heat frying oil in pan to 375 degrees. Cut turkey breasts into strips and set aside. Crack eggs into bowl and beat until combined. Pour flour into a bowl and breadcrumbs into another bowl. You should have three different vessels at this time (egg, flour, breadcrumbs.) Dip turkey strips into flour, then dip into egg mixture, and finally dip into breadcrumbs. Frey each strip for 3-5 minutes in hot frying oil. Remove from oil and drain over rack. Set aside.

Waffles:
Prepare stuffing mix according to the box instructions (or make your own using your holiday favorite recipe!) Heat waffle iron. Coat entire surface in non-stick cooking spray. Place a decent amount of stuffing mix on the bottom section of waffle iron. Close waffle iron and cook for 4-6 minutes. Set cooked waffle aside.

Cranberry Sauce:
Remove sauce from can and place in microwave safe bowl or stove top pan. Heat until liquid and hot.

Place fried turkey on top of waffle and drizzle with cranberry sauce, then serve.
