Small tub of Cool Whip or homemade whipped topping
½ cup brandy
¼ cup sugar
1 Tbsp. vanilla
Lady fingers
Dark cocoa powder
Cup of espresso
Instructions:
Lightly toast lady fingers under broiler in oven (watch very closely.) Beat cream cheese, vanilla, and sugar. Add mascarpone and cool whip. Add brandy. Lay toasted lady fingers on bottom of a container with sides 9’x 9” or smaller. Sprinkle with brewed espresso. Cover with cheese mixture. Sprinkle with cocoa powder. Repeat Step 5 and 6. Can be topped with chocolate covered espresso beans, chopped chocolate or candied pecans. Chill 4 hours – overnight is better.
To make this recipe larger or smaller, always keep the first 3 ingredients equal. Add brandy and vanilla to taste.
